Ingredients
  

  • 1 lb ground beef
  • 1 lb ground lamb
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh mint chopped
  • ¼ cup sun-dried tomatoes chopped
  • 1 medium onion finely diced
  • 4 cloves garlic minced
  • 2 large eggs beaten
  • 1 tsp dried oregano
  • 1 tsp sea salt
  • ½ tsp black pepper ground
  • ½ cup feta cheese crumbled
  • ¼ cup extra virgin olive oil
  • ½ cup plain yogurt
  • ½ cup extra virgin olive oil
  • 4 cloves garlic minced
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh basil chopped
  • 1 juice fresh lemon
  • to taste salt
  • to taste black pepper

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  • In a large bowl, combine ground beef, ground lamb, breadcrumbs, Parmesan, parsley, mint, sun-dried tomatoes, onion, garlic, eggs, oregano, salt, and pepper. Mix until just combined.
  • Fold in crumbled feta cheese evenly.
  • Transfer the mixture to the baking dish and shape into a loaf, smoothing the top.
  • Whisk together olive oil and minced garlic, then brush over the meatloaf.
  • Bake for 1 hour or until the internal temperature reaches 160°F (70°C). Let rest for 10 minutes before slicing.
  • For the Garlic Herb Sauce, sauté olive oil and garlic in a skillet over medium heat for 2 minutes.
  • Remove from heat and stir in parsley, basil, lemon juice, salt, and pepper. Adjust seasoning as needed.
  • Serve meatloaf slices drizzled with garlic herb sauce and a dollop of yogurt.

Notes

Let the meatloaf rest before slicing to retain its juices.
