Ingredients
  

  • 4 large flour tortillas
  • 2 cups fresh spinach roughly chopped
  • 1 cup feta cheese crumbled
  • 1 cup mozzarella cheese shredded
  • 1 medium red onion thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • to taste salt and freshly ground black pepper
  • optional fresh parsley chopped, for garnish

Instructions
 

  • Heat 1 tablespoon of olive oil in a skillet over medium heat.
  • Sauté the sliced red onion for 3-4 minutes until soft and caramelized.
  • Add chopped spinach, garlic powder, oregano, salt, and pepper; cook for 2-3 minutes until spinach wilts.
  • Remove from heat and let the mixture cool slightly.
  • On one half of each tortilla, distribute the spinach and onion mixture evenly.
  • Sprinkle crumbled feta and shredded mozzarella on top.
  • Fold the tortilla over to create a half-moon shape and press down gently.
  • Add remaining olive oil to the skillet and heat over medium.
  • Cook the folded quesadillas for 3-4 minutes on each side until golden brown and cheese is melted.
  • Transfer to a cutting board, let rest for a minute, then cut into wedges and serve.

Notes

Serve with tzatziki for a refreshing dip.
