Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 1 cup corn kernels
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 tablespoon fresh lime juice
  • ¼ cup fresh cilantro chopped
  • to taste salt
  • to taste pepper
  • ½ teaspoon smoked paprika
  • for serving lime wedges

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt, pepper, garlic powder, cumin, and smoked paprika.
  • Arrange the seasoned chicken in a greased baking dish.
  • In a bowl, combine corn, mayonnaise, sour cream, lime juice, chili powder, and half of the cotija cheese.
  • Pour the corn sauce over the chicken and sprinkle with remaining cotija cheese.
  • Cover with foil and bake for 25 minutes.
  • Remove foil and bake for an additional 15-20 minutes until chicken reaches 165°F (74°C).
  • Garnish with cilantro and serve with lime wedges.
