  • 4 ears of corn
  • ¼ cup mayonnaise
  • ¼ cup Mexican crema
  • ½ cup crumbled cotija cheese
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons freshly squeezed lime juice
  • 2 cloves garlic
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons unsalted butter
  • ¼ cup chopped fresh epazote

Instructions
 

  • Preheat your grill to medium-high heat.
  • Grill the corn for 10-15 minutes, turning every 2-3 minutes, until slightly charred.
  • Whisk together mayonnaise, crema, cotija cheese, smoked paprika, cayenne pepper, salt, and black pepper.
  • Slather each ear of corn with the mayonnaise mixture.
  • Squeeze a sliver of lime juice over each ear of corn.
  • Sprinkle garlic, cilantro, and epazote over the corn.
  • Dot the top of each ear with softened butter.
  • Serve the elote immediately with additional lime wedges and cotija cheese if desired.

Notes

You can substitute Mexican crema with sour cream if needed.
