Ingredients
  

  • 1 pound boneless skinless chicken thighs, thinly sliced
  • ¼ cup cornstarch
  • 3 tablespoons vegetable oil
  • ½ cup green onions chopped (separate the white and green parts)
  • 4 cloves garlic finely minced
  • 1 tablespoon fresh ginger finely minced
  • ¼ cup soy sauce
  • ¼ cup hoisin sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon crushed red pepper flakes optional for heat
  • Cooked rice or noodles for serving
  • Sesame seeds for garnish (optional)

Instructions
 

  • In a large mixing bowl, add the sliced chicken thighs and sprinkle the cornstarch over them. Toss well until evenly coated.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat until it shimmers.
  • Add the cornstarch-coated chicken strips to the skillet in a single layer. Cook undisturbed for 4-5 minutes, then stir occasionally until golden brown and cooked through.
  • Remove the chicken from the skillet and set aside on a plate.
  • In the same skillet, add the chopped white parts of the green onions, minced garlic, and minced ginger. Sauté for 1-2 minutes until fragrant.
  • In a small bowl, combine the soy sauce, hoisin sauce, brown sugar, rice vinegar, sesame oil, and crushed red pepper flakes. Whisk until the sugar dissolves.
  • Pour the sauce into the skillet with the sautéed aromatics and bring to a gentle simmer.
  • Return the cooked chicken to the skillet and toss in the sauce until well-coated. Cook for an additional 2-3 minutes.
  • Remove from heat and stir in the green parts of the chopped green onions.
  • Serve over warm rice or noodles and sprinkle with sesame seeds if desired.
