  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup finely grated carrots
  • ½ cup finely grated zucchini
  • ½ cup drained crushed pineapple
  • ½ cup unsweetened shredded coconut
  • ½ cup chopped walnuts or pecans
  • ½ cup raisins or dried cranberries

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  • Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, and sea salt in a large bowl.
  • In a separate bowl, whisk granulated sugar, brown sugar, canola oil, eggs, and vanilla extract until smooth.
