Ingredients
  

  • 1 cup quinoa thoroughly rinsed and drained
  • 2 cups almond milk
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • 1 ripe banana sliced into rounds
  • ½ cup mixed berries
  • ¼ cup chopped nuts
  • 2 tablespoons chia seeds
  • 1 tablespoon nut butter
  • fresh mint leaves for garnish

Instructions
 

  • In a medium-sized saucepan, combine the rinsed quinoa and almond milk.
  • Bring the mixture to a rolling boil over medium-high heat.
  • Reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is tender.
  • Remove from heat and let it rest, covered, for an additional 5 minutes.
  • Fluff the quinoa with a fork and stir in maple syrup, vanilla extract, cinnamon, and sea salt.
  • Distribute the quinoa mixture into serving bowls.
  • Top each bowl with sliced banana, mixed berries, chopped nuts, and chia seeds.
  • Drizzle nut butter over the toppings and add fresh mint leaves if desired.
