Ingredients
  

  • 1 cup cooked chickpeas
  • 1 cup pitted Medjool dates
  • ½ cup rolled oats
  • ¼ cup almond butter
  • ¼ cup honey or maple syrup
  • ½ teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • ¼ cup chopped nuts
  • ¼ cup dark chocolate chips

Instructions
 

  • In a food processor, combine the cooked chickpeas and pitted dates and blend until smooth.
  • Add the rolled oats, almond butter, honey, vanilla extract, salt, and cinnamon to the food processor and blend until combined.
  • Transfer the mixture to a large bowl and fold in the chopped nuts and dark chocolate chips.
  • Line an 8x8 inch baking dish with parchment paper.
  • Pour the mixture into the lined baking dish and press it down firmly.
  • Refrigerate for 1-2 hours to allow the bars to set.
  • Lift the mixture out using the parchment paper and cut into squares or rectangles.
