Ingredients
  

  • 1 lb beef steak sirloin or ribeye, cut into bite-sized cubes
  • 2 cups cheese tortellini fresh or frozen
  • 4 tablespoons unsalted butter
  • 3 cloves garlic finely minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning blend
  • ½ teaspoon red pepper flakes optional, for a spicy kick
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes halved
  • 1 cup fresh baby spinach
  • 1 tablespoon fresh parsley finely chopped (for garnish)
  • Grated Parmesan cheese for serving

Instructions
 

  • In a medium bowl, season the steak pieces with salt, black pepper, smoked paprika, and Italian seasoning.
  • Heat a large skillet over medium-high heat and melt 2 tablespoons of butter.
  • Sear the steak for 2-3 minutes on each side until browned, then remove from skillet.
  • In the same skillet, melt the remaining butter and sauté minced garlic and red pepper flakes for 30 seconds.
  • Add tortellini and halved cherry tomatoes, then pour in enough water to submerge the tortellini.
  • Bring to a boil and cook tortellini according to package instructions until tender.
  • Stir in fresh baby spinach and return cooked steak to the skillet, tossing until spinach wilts.
  • Remove from heat, garnish with parsley and Parmesan cheese, and serve immediately.
