Ingredients
  

  • 4 pieces bone-in chicken thighs skin-on
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 4 medium carrots sliced
  • 3 medium Yukon Gold potatoes diced
  • 2 cups chicken broth
  • 1 cup Guinness stout
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon fresh rosemary chopped
  • to taste salt and pepper
  • 1 cup frozen peas
  • to taste fresh parsley chopped

Instructions
 

  • Sear the chicken thighs in olive oil until golden brown, then set aside.
  • Sauté diced onion until translucent, then add minced garlic and cook until fragrant.
  • Incorporate sliced carrots and diced potatoes, cooking for about 5 minutes.
  • Pour in chicken broth and optional Guinness, deglazing the pot.
  • Add thyme, rosemary, salt, and pepper, stirring to combine.
  • Return seared chicken to the pot, skin-side up, and bring to a simmer.
  • Cover and reduce heat, simmering for 30-35 minutes until chicken is cooked.
  • Stir in frozen peas in the last 5 minutes of cooking.
  • Taste and adjust seasoning before serving, garnished with parsley.
