Ingredients
  

  • 1 lb smoked sausage sliced into rounds
  • 1 cup long-grain rice uncooked
  • 1 medium onion diced
  • 1 medium bell pepper diced
  • 2 cloves garlic minced
  • 14.5 oz can diced tomatoes with juices
  • 2 cups chicken broth
  • 1 cup frozen peas
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley chopped for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat and sauté smoked sausage until browned.
  • Add diced onion and bell pepper, sauté until softened.

  • Let sit covered for 5 minutes, then fluff rice with a fork.
