  • 2 cups cooked brown rice
  • 1 pound boneless skinless chicken breast
  • 1 cup mixed vegetables
  • 3 large eggs
  • 4 green onions
  • 3 cloves garlic
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon fresh ginger
  • Salt and black pepper to taste
  • 1 tablespoon sriracha optional

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add diced chicken, season with salt and pepper, and sauté until cooked through.
  • Remove chicken and set aside, then scramble eggs in the same skillet.
  • Add minced garlic and grated ginger, cooking until fragrant.
