Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 1 cup low-fat cottage cheese
  • 1 cup marinara sauce
  • 1 cup shredded part-skim mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Olive oil spray

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Pound the chicken breasts to an even thickness and season with salt, pepper, and Italian seasoning.
  • Set up a breading station with beaten egg in one bowl and a mixture of breadcrumbs, garlic, salt, and pepper in another.
  • Coat each chicken breast in egg, then in the breadcrumb mixture.
  • Place the coated chicken on a baking sheet lined with parchment paper and spray with olive oil.
  • Bake for 20-25 minutes until cooked through and golden brown.
  • Mix cottage cheese with a pinch of salt and pepper in a bowl.
  • In a serving bowl, add cottage cheese and place the crispy chicken on top.
  • Drizzle marinara sauce over the chicken and sprinkle with mozzarella and Parmesan cheese.
  • Return to the oven for 5-7 minutes until the cheese is melted and bubbly.
