  • 2 cups milk
  • 1 cup pumpkin puree
  • ¼ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin spice blend
  • ½ teaspoon sea salt
  • ½ cup chopped nuts
  • ½ cup dried fruits
  • optional toppings: sliced bananas additional chopped nuts, or yogurt

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  • In a large bowl, combine rolled oats, baking powder, pumpkin spice blend, and sea salt.
  • In another bowl, whisk together milk, pumpkin puree, maple syrup, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry oat mixture and stir gently until combined.
  • Fold in chopped nuts and dried fruits until evenly dispersed.
  • Transfer the mixture to the prepared baking dish and spread evenly.
  • Bake for 25-30 minutes until golden brown and firm.
