Rice Krispies Treats Ice Cream Sandwich Recipe

Ingredients
- 2 cups Rice Krispies cereal
- 1 cup marshmallows
- ¼ cup melted butter or margarine
- 1 teaspoon vanilla extract
- a pinch salt
- 1.5 quarts ice cream
- whipped cream and sprinkles optional
Instructions
- Melt the butter or margarine in a large pot over low heat.
- Add the marshmallows to the pot and stir until they are completely melted.
- Remove the pot from the heat and stir in the vanilla extract and salt.
- Add the Rice Krispies cereal to the pot and stir until the cereal is evenly coated.
- Press the Rice Krispies mixture into a greased 9x13-inch baking dish.
- Allow the mixture to cool and harden for approximately 30 minutes.
- Cut out circles or squares from the Rice Krispies mixture using a cookie cutter or a glass.
- Scoop your favorite ice cream into balls, making sure they are about the same size as the Rice Krispies treats.
- Assemble the ice cream sandwiches by placing a scoop of ice cream between two Rice Krispies treats.
- Serve immediately and garnish with whipped cream and sprinkles if desired.
