Ingredients
  

  • 20 large pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach chopped
  • 2 cloves garlic finely minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and freshly ground black pepper to taste
  • 3 cups marinara sauce
  • Fresh basil leaves for garnish optional

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring salted water to a rolling boil and cook the pasta shells until al dente.
  • Drain the shells and set them aside to cool slightly.
  • In a mixing bowl, combine ricotta cheese, ½ cup mozzarella, Parmesan, egg, spinach, garlic, oregano, basil, salt, and pepper.
  • Fill each pasta shell with the ricotta mixture and arrange them in a greased baking dish.
  • Pour marinara sauce over the stuffed shells and sprinkle with remaining mozzarella.
  • Cover with aluminum foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes.
  • Allow to cool for a few minutes, garnish with fresh basil leaves, and serve hot.

Notes

For a richer flavor, use fresh herbs in the filling.
