Ingredients
  

  • 1 large bunch kale stems removed and leaves chopped
  • 1 head garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup homemade or store-bought croutons
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon anchovy paste optional
  • to taste fresh lemon wedges for serving

Instructions
 

  • Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, sprinkle with salt, wrap in foil, and roast for 30-35 minutes.
  • In a large bowl, combine chopped kale with olive oil, salt, and black pepper. Massage the kale for 2-3 minutes until softened.
  • In a separate bowl, mix roasted garlic, mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, and anchovy paste until smooth.
  • Pour the dressing over the kale and toss to coat. Gently fold in croutons and Parmesan cheese.
  • Transfer the salad to plates or a serving bowl. Drizzle with olive oil and garnish with lemon wedges.
  • Serve immediately, allowing guests to squeeze lemon juice over their salad.
