  • 1 ½ cups crushed shortbread cookies
  • ½ cup unsweetened shredded coconut
  • ½ cup unsalted butter melted
  • 2 tablespoons granulated sugar
  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ½ cup sour cream
  • ½ cup unsweetened shredded coconut
  • ½ cup caramel sauce
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons coconut oil
  • ½ cup unsweetened shredded coconut toasted

Instructions
 

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • Mix crushed shortbread cookies, shredded coconut, melted butter, and sugar for the crust, then press into the pan and bake for 10 minutes.
  • Beat cream cheese and sugar until smooth, then add vanilla extract.
  • Incorporate eggs one at a time, mixing on low speed.
  • Fold in sour cream and shredded coconut, then add caramel sauce.
  • Pour the filling over the cooled crust and smooth the top.
  • Bake for 50-60 minutes until the center is set with a slight jiggle.
  • Cool in the oven for 1 hour, then refrigerate for at least 4 hours.
  • Melt chocolate chips and coconut oil in the microwave, stirring until smooth.
