Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup carrots shredded
  • 1 cup red cabbage finely sliced
  • ½ cup cucumber cut into thin matchsticks
  • ¼ cup green onions thinly sliced
  • ¼ cup fresh cilantro roughly chopped
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon minced garlic
  • 4 large lettuce leaves
  • sesame seeds for garnish

Instructions
 

  • Combine shredded chicken, carrots, red cabbage, cucumber, green onions, and cilantro in a large bowl.
  • In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, ginger, and garlic.
  • Drizzle the dressing over the chicken and vegetable mixture and toss to coat.
  • Arrange lettuce leaves on a platter.
  • Spoon the chicken mixture into the center of each lettuce leaf.
  • Fold the sides of the lettuce over the filling and roll tightly to create wraps.
  • Sprinkle sesame seeds on top for garnish and serve immediately.

Notes

For a vegan option, substitute honey with maple syrup.
