Instructions
Heat vegetable oil in a large pot over medium-high heat and sear beef cubes until browned.
Remove beef and set aside; sauté diced onion for about 5 minutes until soft.
Add minced garlic and cook for an additional minute until fragrant.
Stir in sliced carrots and diced red bell pepper, cooking for 3-4 minutes.
Add sweet paprika, optional caraway seeds, dried thyme, and cayenne pepper, mixing well.
Return beef to the pot, pour in beef broth, and add diced potatoes and canned tomatoes.
Stir in Worcestershire sauce, salt, and pepper; bring to a boil then reduce heat to low.
Cover and simmer for 1.5 to 2 hours until beef is tender, stirring occasionally.
Adjust seasoning and add broth or water if the soup is too thick.
Serve hot, garnished with parsley and sour cream if desired.
