Ingredients
  

  • 1 lb beef chuck cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion finely diced
  • 3 cloves garlic minced
  • 2 medium carrots sliced into rounds
  • 1 medium red bell pepper diced
  • 2 tablespoons sweet paprika
  • 1 teaspoon caraway seeds optional
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper or to taste
  • 6 cups beef broth
  • 2 medium potatoes peeled and diced
  • 1 can 14 oz diced tomatoes (including juices)
  • 1 tablespoon Worcestershire sauce
  • to taste salt and pepper
  • to taste fresh parsley chopped (for garnish)
  • to taste sour cream optional, for serving

Instructions
 

  • Heat vegetable oil in a large pot over medium-high heat and sear beef cubes until browned.
  • Remove beef and set aside; sauté diced onion for about 5 minutes until soft.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Stir in sliced carrots and diced red bell pepper, cooking for 3-4 minutes.
  • Add sweet paprika, optional caraway seeds, dried thyme, and cayenne pepper, mixing well.
  • Return beef to the pot, pour in beef broth, and add diced potatoes and canned tomatoes.
  • Stir in Worcestershire sauce, salt, and pepper; bring to a boil then reduce heat to low.
  • Cover and simmer for 1.5 to 2 hours until beef is tender, stirring occasionally.
  • Adjust seasoning and add broth or water if the soup is too thick.
  • Serve hot, garnished with parsley and sour cream if desired.
