drained and rinsed

fresh spinach
roughly chopped

cooked rice

corn

shredded cheese

salsa

ground cumin

Salt and black pepper
to taste

large flour tortillas
Olive oil
for cooking
Optional toppings: sour cream
diced avocado, lime wedges
Instructions
Heat a drizzle of olive oil in a medium skillet over medium heat.
Add the black beans, chopped spinach, corn, cumin, garlic powder, salt, and pepper. Cook for 3-4 minutes until spinach wilts.
Remove from heat and stir in the cooked rice and salsa until combined.
Lay out the tortillas and distribute the filling in the center of each.
Sprinkle shredded cheese over the filling.
Fold the sides of each tortilla inward and roll tightly from the bottom.
Return the skillet to heat, adding more olive oil if needed. Cook burritos seam-side down for 2-3 minutes on each side until golden brown.
Remove from skillet and let cool for a minute. Slice each burrito in half.
Serve with optional toppings like sour cream, avocado, or lime wedges.
