Ingredients
  

  • 1 can black beans drained and rinsed
  • 2 cups fresh spinach roughly chopped
  • 1 cup cooked rice
  • ½ cup corn
  • ½ cup shredded cheese
  • ¼ cup salsa
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 4 large flour tortillas
  • Olive oil for cooking
  • Optional toppings: sour cream diced avocado, lime wedges

Instructions
 

  • Heat a drizzle of olive oil in a medium skillet over medium heat.
  • Add the black beans, chopped spinach, corn, cumin, garlic powder, salt, and pepper. Cook for 3-4 minutes until spinach wilts.
  • Remove from heat and stir in the cooked rice and salsa until combined.
  • Lay out the tortillas and distribute the filling in the center of each.
  • Sprinkle shredded cheese over the filling.
  • Fold the sides of each tortilla inward and roll tightly from the bottom.
  • Return the skillet to heat, adding more olive oil if needed. Cook burritos seam-side down for 2-3 minutes on each side until golden brown.
  • Remove from skillet and let cool for a minute. Slice each burrito in half.
  • Serve with optional toppings like sour cream, avocado, or lime wedges.
