Ingredients
  

  • 12 pieces manicotti shells
  • 1 pound Italian sausage
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt
  • to taste pepper
  • 3 cups marinara sauce
  • for garnish fresh basil leaves

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the Italian sausage over medium heat until browned, about 5-7 minutes.
  • Drain excess fat and let the sausage cool slightly.
  • In a bowl, mix the sausage with ricotta, ½ cup mozzarella, Parmesan, egg, garlic, oregano, basil, salt, and pepper until creamy.
  • Fill each manicotti shell with the sausage mixture and place them in a greased baking dish.
  • Pour marinara sauce over the shells and sprinkle remaining mozzarella on top.
  • Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes.
  • Let cool for a few minutes before garnishing with fresh basil leaves.

Notes

For a richer flavor, use a mix of sweet and spicy sausage.
