Ingredients
  

  • 1 pound ground turkey
  • 2 medium zucchinis diced
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper optional
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons extra virgin olive oil
  • Fresh parsley or cilantro chopped, for garnish
  • 1 fresh lemon juiced

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and sauté for 3-4 minutes until translucent.
  • Stir in minced garlic and cook for 1 minute until aromatic.
  • Increase heat to medium-high and add ground turkey, cooking for 5-7 minutes until browned.
  • Add diced zucchinis and cook for an additional 3-4 minutes until slightly softened.
  • Mix in chickpeas, cumin, paprika, cayenne (if using), salt, and pepper, cooking for 5 minutes.
  • Remove from heat and squeeze fresh lemon juice over the mixture.
  • Garnish with chopped parsley or cilantro before serving.
