Ingredients
  

  • 1 pound flank steak
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste freshly ground black pepper
  • 2 cups cooked brown rice or quinoa
  • 1 can 15 oz black beans
  • 1 cup corn
  • 1 cup cherry tomatoes
  • 1 ripe avocado
  • 1 cup romaine lettuce
  • ½ cup fresh cilantro
  • 1 lime juice
  • optional Greek yogurt or sour cream
  • optional salsa
  • optional shredded cheese
  • optional sliced jalapeños

Instructions
 

  • Marinate the steak with olive oil, cumin, paprika, garlic powder, salt, and pepper for at least 30 minutes.
  • Preheat grill or grill pan over medium-high heat and cook steak for 5-7 minutes on each side for medium-rare.
  • Let the steak rest for 5-10 minutes before slicing thinly against the grain.
  • Layer cooked brown rice or quinoa in bowls as the base.
  • Add black beans, corn, halved cherry tomatoes, diced avocado, and chopped romaine lettuce.
  • Top with sliced steak and sprinkle with chopped cilantro.
  • Squeeze fresh lime juice over the bowls and add optional toppings as desired.
  • Serve immediately or store in the refrigerator for up to 3 days.

Notes
