Ingredients
  

  • 4 large eggplants
  • ¼ cup tahini
  • ¼ cup freshly squeezed lemon juice
  • 2 cloves garlic
  • ½ teaspoon salt
  • 3 tablespoons olive oil
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh mint
  • 1 tablespoon smoked paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Pierce each eggplant with a fork a few times and place them on a baking sheet lined with parchment paper.
  • Roast the eggplants in the oven for about 45 minutes, or until the skin is charred and the flesh is soft and tender.
  • Remove the eggplants from the oven and let them cool down to a comfortable temperature.
  • Peel the eggplants and place the flesh in a blender or food processor.
  • Add the tahini, lemon juice, garlic, salt, olive oil, parsley, mint, paprika, cumin, and cayenne pepper to the blender.
  • Blend the mixture until smooth and creamy, adding a little water if necessary to achieve the desired consistency.
  • Taste the baba ganoush and adjust the seasoning as needed to get the perfect flavor.
