Ingredients
  

  • 2 cups sushi rice
  • 2 ½ cups water
  • cup rice vinegar
  • 2 tablespoons granulated sugar
  • 1 teaspoon sea salt
  • 1 pound skinless salmon fillet diced
  • ¼ cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 whole ripe avocado sliced
  • ¼ cup green onions finely chopped
  • 1 sheet nori cut into strips
  • to taste Furikake seasoning

Instructions
 

  • Rinse the sushi rice under cold water until clear, then cook with water according to instructions.
  • Combine rice vinegar, sugar, and sea salt in a saucepan, heat until dissolved, then fold into cooked rice.
  • In a bowl, mix diced salmon, mayonnaise, Sriracha, soy sauce, sesame oil, garlic powder, and onion powder until well combined.
  • Preheat oven to 375°F (190°C). Spread seasoned sushi rice in a baking dish.
  • Layer the spicy salmon mixture on top of the rice, covering it completely.
  • Bake for 15-20 minutes until salmon is cooked and top is golden.
  • Let cool for a few minutes, then top with avocado, green onions, and optional garnishes.
  • Cut into squares and serve warm.
