Ingredients
  

  • 1 block firm tofu pressed and drained
  • 1 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 4 large whole wheat tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup shredded carrots
  • 1 ripe avocado
  • ¼ cup Greek yogurt or plant-based yogurt
  • 1 tablespoon fresh lime juice
  • for garnish fresh cilantro optional

Instructions
 

  • Cut the pressed tofu into bite-sized cubes and mix with olive oil, garlic powder, onion powder, salt, and pepper.
  • Heat a non-stick skillet over medium-high heat and cook the seasoned tofu for 5-7 minutes until golden brown.
  • Pour buffalo sauce over the cooked tofu and stir gently, cooking for an additional 2-3 minutes.
  • In a small bowl, mash the avocado and mix with Greek yogurt, lime juice, and a pinch of salt until creamy.
  • Lay out the tortillas and spread a dollop of avocado dressing in the center of each.
  • Layer with shredded lettuce, buffalo tofu mixture, diced tomatoes, and shredded carrots.
  • Fold the sides of the tortilla over the filling and roll tightly to form a wrap.
  • Cut each wrap in half diagonally and serve immediately, garnished with cilantro if desired.

Notes

Serve with extra buffalo sauce for dipping.
