  • 1 lb baby bok choy
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic
  • 1 tablespoon fresh ginger
  • 1-2 pieces red chili peppers
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon honey
  • sesame seeds
  • chopped green onions

Instructions
 

  • Rinse the baby bok choy under cold water and halve them lengthwise.
  • Heat olive oil in a skillet over medium-high heat.
  • Add minced garlic, grated ginger, and chopped chili peppers; sauté for 1-2 minutes.
  • Place bok choy cut side down in the skillet and cook for 2-3 minutes.
  • Whisk together soy sauce, rice vinegar, sesame oil, and honey in a bowl.
  • Pour the sauce over the bok choy and toss gently.
  • Cook for an additional 1-2 minutes to warm through.
  • Transfer to a serving platter and garnish with sesame seeds and green onions.
  • Serve immediately as a side or over rice.
