Spicy Queso Fundido Fiesta Recipe
A delicious and spicy Mexican-inspired dish made with melted cheese, chorizo sausage, and chicken, served with tortilla chips. Perfect for gatherings and parties.
Ingredients
- 1 cup Monterey Jack cheese
- ½ cup Cheddar cheese
- ¼ cup chopped cilantro
- ¼ cup diced onion
- ¼ cup diced bell pepper
- 1 jalapeño pepper
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- Salt and pepper
- 1 cup cooked chorizo sausage
- 1 cup cooked chicken
- ½ cup diced tomatoes
- ¼ cup chopped scallions
- Tortilla chips
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté the onion, bell pepper, and jalapeño in olive oil until tender.
- Add cumin, smoked paprika, salt, and pepper to the skillet and cook for 1 minute.
- Combine cooked chorizo sausage, shredded chicken, diced tomatoes, and chopped scallions in a bowl.
- Mix Monterey Jack and Cheddar cheese in a separate bowl.
- Assemble the queso fundido by layering the vegetable mixture, cheese mixture, and meat mixture in a baking dish.
- Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle with chopped cilantro.
- Serve hot with tortilla chips.
