Ingredients
  

  • 12 oz penne pasta
  • 1 cup cherry tomatoes halved
  • 1 cup zucchini diced
  • 1 cup bell peppers diced
  • 1 cup asparagus trimmed and cut into 2-inch pieces
  • 1 cup Boursin cheese garlic & herb flavor
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Bring salted water to a boil in a large pot, add penne pasta, and cook until al dente, about 8 to 10 minutes. Drain and set aside.
  • In a skillet, heat olive oil over medium heat, add minced garlic, and sauté for 1 minute until fragrant.
  • Add cherry tomatoes, zucchini, bell peppers, and asparagus to the skillet. Sauté for 5 to 7 minutes until tender but crisp. Season with Italian seasoning, salt, and pepper.
  • In a mixing bowl, combine cooked penne, sautéed vegetables, Boursin cheese, heavy cream, and half of the mozzarella. Stir until well combined.
  • Transfer the mixture to a greased 9x13 inch baking dish, spread evenly, and top with remaining mozzarella and Parmesan.
  • Bake for 20 to 25 minutes until cheese is bubbly and golden brown.
  • Allow to cool for a few minutes before serving, garnished with fresh basil.

Notes

For a richer flavor, consider adding cooked chicken or sausage.
