Ingredients
  

  • 1 cup sushi rice
  • 1 ¼ cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 1 ripe avocado sliced
  • 1 cucumber finely diced
  • ½ cup cooked shrimp chopped
  • ¼ cup carrots finely grated
  • ¼ cup shelled edamame
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • Nori sheets cut into small squares
  • Optional: Wasabi and pickled ginger for serving

Instructions
 

  • Rinse the sushi rice under cold water until clear, then cook with water according to instructions.
  • Combine rice vinegar, sugar, and salt in a bowl, stir until dissolved, and fold into the cooked rice.
  • Preheat oven to 350°F (175°C) and grease a muffin tin.
  • Press nori squares into muffin cups and bake for 5-7 minutes until crispy.
  • Pack cooled rice into each nori cup and layer with avocado, cucumber, shrimp, carrots, and edamame.
  • Whisk soy sauce and sesame oil together, then drizzle over the sushi cups.
  • Sprinkle sesame seeds on top for garnish.
  • Arrange on a platter and serve with wasabi and pickled ginger.

Notes

For a vegetarian option, substitute shrimp with tofu.
