Ingredients
  

  • 1 lb boneless skinless chicken thighs, diced
  • 1 cup fresh pineapple chunks
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons honey
  • 2 cloves garlic finely minced
  • 1 teaspoon fresh ginger grated
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons vegetable oil
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Instructions
 

  • In a mixing bowl, whisk together soy sauce, brown sugar, honey, garlic, ginger, black pepper, and red pepper flakes.
  • Add diced chicken thighs to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes.
  • Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade and reserve marinade.
  • Sauté chicken for 5-7 minutes until golden brown and fully cooked.
  • Stir in pineapple chunks and cook for an additional 2-3 minutes.
  • Pour reserved marinade into the skillet, stirring to combine, and bring to a gentle simmer for 3-4 minutes.
  • Gradually stir in cornstarch slurry and cook for another minute until sauce thickens.
  • Remove from heat and serve over cooked rice or quinoa.
  • Garnish with sliced green onions and toasted sesame seeds.
