Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • ½ cup honey
  • ¼ cup soy sauce
  • 4 cloves garlic finely minced
  • 1 tablespoon fresh ginger finely grated
  • 1 tablespoon sesame oil
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 2 cups broccoli florets
  • 1 cup carrots thinly sliced
  • 1 piece red bell pepper julienned
  • 1 cup snap peas
  • 2 tablespoons cornstarch optional, for thickening
  • 2 tablespoons water optional, for thickening
  • cooked rice or quinoa for serving
  • sesame seeds and chopped green onions for garnish

Instructions
 

  • In a medium bowl, combine honey, soy sauce, minced garlic, grated ginger, sesame oil, black pepper, and salt. Whisk until smooth.
  • Place chicken breasts in the slow cooker and pour the sauce over them, ensuring they are coated.
  • Add broccoli, carrots, red bell pepper, and snap peas on top of the chicken and sauce.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  • For a thicker sauce, mix cornstarch and water in a small bowl and add to the slow cooker 30 minutes before serving.
  • Shred the chicken in the slow cooker using two forks and mix with the sauce and vegetables.
  • Serve over warm rice or quinoa, garnished with sesame seeds and green onions.
