  • 2 tablespoons vegetable oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon Thai red curry paste
  • 2 cups chicken broth
  • 1 cup coconut milk
  • ½ cup water
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon Thai basil leaves
  • 1 pound large shrimp
  • 2 tablespoons fresh lime juice
  • ¼ cup chopped fresh cilantro

Instructions
 

  • Heat the oil in a large pot over medium heat.
  • Add the diced onion and cook until it softens, about 3-4 minutes.
  • Add the minced garlic and grated ginger to the pot and cook for 1 minute.
  • Add the Thai red curry paste to the pot and cook for 1 minute.
  • Combine the chicken broth, coconut milk, water, salt, black pepper, and Thai basil leaves in the pot.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  • Add the peeled and deveined shrimp to the pot and cook until they turn pink and are fully cooked.
  • Stir in the fresh lime juice and adjust the seasoning as needed.
