Ingredients
  

  • 2 pounds boneless skinless chicken breast or thighs
  • 4-6 Thai bird's eye chilies
  • 2 cloves of garlic
  • 2 tablespoons grated fresh ginger
  • 2 tablespoons vegetable oil
  • 4 tablespoons Thai green curry paste
  • 2 cups coconut milk
  • 1 cup chicken broth
  • ½ cup Thai basil leaves
  • ½ cup bamboo shoots
  • ½ cup bell peppers
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons freshly squeezed lime juice

Instructions
 

  • Make the chili paste by blending chopped chilies, garlic, and ginger in a blender or food processor.
  • Heat oil in a large pan over medium heat and cook the blended paste for 1-2 minutes.
  • Add the green curry paste and cook for another minute, stirring constantly.
  • Add the chicken and cook until browned, about 5-7 minutes.
  • Pour in the coconut milk, chicken broth, fish sauce, palm sugar, salt, and pepper, and stir well to combine.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes or until the chicken is cooked through.
  • Add the bamboo shoots, bell peppers, and Thai basil leaves, and simmer for another 5 minutes.
