Ingredients
  

  • pounds boneless skinless chicken thighs
  • 2 tablespoons vegetable oil
  • 3 cloves garlic
  • 1 tablespoon grated fresh ginger
  • ¼ cup soy sauce
  • ¼ cup Shaoxing wine
  • ¼ cup sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 2 green onions
  • ¼ cup chopped fresh basil
  • salt and pepper

Instructions
 

  • Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
  • Add the chicken and cook until browned, about 5-7 minutes. Remove from the wok and set aside.
  • Add the remaining 1 tablespoon of vegetable oil, then add the minced garlic and grated ginger and stir-fry until fragrant, about 30 seconds.
  • Add the soy sauce, Shaoxing wine, and sesame oil. Stir to combine and bring to a boil.
  • Add the browned chicken back into the wok and stir to coat with the sauce.
  • Reduce the heat to medium-low and simmer, uncovered, for 10-15 minutes or until the chicken is cooked through and the sauce has thickened.
  • Stir in the sugar and cornstarch mixture (mixed with a little water).
  • Season with salt and pepper to taste.
  • Garnish with chopped green onions and fresh basil.
  • Serve hot and enjoy!
