Ingredients
  

  • 4 pieces Hawaiian rolls
  • 4 slices sharp cheddar cheese
  • 2 tablespoons unsalted butter softened
  • 2 tablespoons mayonnaise
  • ½ cup fresh pineapple slices
  • 1 tablespoon fresh cilantro finely chopped
  • a pinch salt
  • a pinch freshly ground black pepper

Instructions
 

  • Slice each Hawaiian roll horizontally to create a top and bottom.
  • Blend softened butter and mayonnaise until smooth and spread on the outside of each roll.
  • Layer a slice of cheddar cheese on the bottom half of each roll.
  • Add a slice of grilled or canned pineapple on top of the cheese.
  • Sprinkle fresh cilantro over the pineapple, then top with another slice of cheddar.
  • Place the top half of the roll to complete the sandwich.
  • Preheat a non-stick skillet over medium heat and grill the sandwiches for 2-3 minutes until golden brown.
  • Flip the sandwiches and grill the other side for another 2-3 minutes until the cheese is melted.
  • Remove from skillet, slice in half if desired, and serve warm.

Notes

For extra flavor, consider adding a slice of ham or turkey.
