Ingredients
  

  • 1 cup wild rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion
  • 3 cloves garlic
  • 8 ounces mixed mushrooms
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 leaf bay leaf
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons nutritional yeast
  • fresh parsley

Instructions
 

  • Prepare the wild rice by rinsing it in a fine-mesh strainer and draining well.
  • Sauté the onion and garlic in olive oil until softened.
  • Add the mixed mushrooms and cook until they release their liquid and start to brown.
  • Combine the vegetable broth, wild rice, thyme, rosemary, bay leaf, salt, and pepper in a large pot.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for 40-45 minutes.
  • Remove the bay leaf and use an immersion blender to puree the soup until slightly smooth, if desired.
  • Stir in nutritional yeast for a cheesy, nutty flavor, if using.
  • Season the soup to taste and serve hot, garnished with chopped fresh parsley if desired.
  • Serve with a side of crusty bread or crackers for a satisfying meal.
