Ingredients
  

  • 2 medium beets peeled and grated
  • 2 large carrots peeled and grated
  • ¼ cup fresh parsley finely chopped
  • ¼ cup walnuts chopped
  • ¼ cup feta cheese crumbled
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Grate the peeled beets and carrots and place them in a large mixing bowl.
  • Add the finely chopped parsley and chopped walnuts to the bowl.
  • In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
