Ingredients
  

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • ½ cup unsweetened applesauce
  • ½ cup honey or maple syrup
  • ½ cup unsweetened almond milk
  • 2 medium apples peeled, cored, and diced
  • ¼ cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup chopped walnuts or pecans optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  • In a large bowl, mix rolled oats, whole wheat flour, baking powder, baking soda, ground cinnamon, and salt.
  • In another bowl, whisk together applesauce, honey (or maple syrup), almond milk, melted coconut oil, and vanilla extract.
  • Pour the wet mixture into the dry ingredients and stir until just combined.
  • Fold in the diced apples and optional nuts until evenly distributed.
  • Spoon the batter into muffin cups, filling each about two-thirds full.
  • Bake for 18-20 minutes, checking for doneness with a toothpick.
  • Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
