  • 1 pound ground turkey
  • 2 medium zucchinis diced into bite-sized pieces
  • 1 medium red bell pepper chopped into small cubes
  • 1 small onion diced finely
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning blend
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 1 cup cherry tomatoes halved
  • ¼ cup fresh basil leaves chopped
  • ½ teaspoon red pepper flakes optional, for added heat
  • Freshly grated Parmesan cheese for serving (optional)

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onion and sauté for about 3 minutes until soft.
  • Incorporate the minced garlic and sauté for an additional minute.
  • Raise the heat to medium-high and add the ground turkey, cooking until browned, about 5-7 minutes.
  • Stir in the zucchini, red bell pepper, Italian seasoning, smoked paprika, salt, and pepper.
  • Cook for another 5-7 minutes until the vegetables are tender.
  • Fold in the halved cherry tomatoes and cook for 2-3 minutes.
  • Sprinkle in red pepper flakes if desired and mix well.
  • Remove from heat and stir in the chopped basil.
  • Serve warm, garnished with Parmesan cheese if desired.
