Ingredients
  

  • 1 lb boneless skinless chicken breasts, diced
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 each bell pepper red or yellow, thinly sliced
  • 1 medium zucchini sliced into half-moons
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 each lemon zest and juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • Salt and freshly cracked pepper to taste
  • Fresh parsley chopped, for garnish

Instructions
 

  • Cook the orzo in salted boiling water until al dente, then drain and rinse with cold water.
  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sauté the seasoned chicken until fully cooked and golden brown.
  • Remove the chicken and set aside, then add the remaining olive oil to the skillet.
  • Sauté the onion and garlic until fragrant and translucent.
  • Add the bell pepper, zucchini, broccoli, and snap peas, stir-frying until tender yet crisp.
  • Return the chicken to the skillet, then add the cooked orzo, lemon zest, lemon juice, soy sauce, honey, and oregano.
  • Toss everything together until well combined and heated through.
  • Taste and adjust seasoning with salt, pepper, or lemon juice as needed.
  • Serve garnished with chopped parsley.
