Ingredients
  

  • 6 cups Rice Krispies cereal
  • 1 cup mini marshmallows
  • ½ cup unsalted butter
  • ¼ cup freshly squeezed lemon juice
  • 1 zest of 1 lemon
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • ½ cup white chocolate chips optional
  • extra lemon zest for garnish optional

Instructions
 

  • Grease a 9x13 inch baking dish and set aside.
  • Melt the unsalted butter in a large saucepan over medium heat.
  • Add mini marshmallows and stir until completely melted and smooth.
  • Remove from heat and stir in lemon juice, lemon zest, vanilla extract, and salt.
  • Gradually fold in Rice Krispies cereal until evenly coated.
  • If using, fold in white chocolate chips.
  • Pour mixture into the prepared baking dish and press evenly.
  • Allow to cool at room temperature for about 30 minutes.
  • Cut into squares or rectangles and garnish with lemon zest before serving.
